(Freezable) Breakfast Burritos

My husband and I LOVE breakfast burritos. I'm not a fan of really any prepacked frozen food, the added salt and preservatives just kind of gross me out.

One of our favorite quick and protein-packed breakfasts are these freezable breakfast burritos. They're perfect because I can make a dozen burritos ahead of time and breakfast is taken care of for a week or two. The burritos thaw and reheat very well in the microwave.

-12 eggs
-1/4 cup milk
-Salt and pepper
-1 lb. sausage or turkey sausage
-12 flour tortillas (we have used wheat tortillas as well)
-Shredded cheese
-Any other "add-in's" of your choice (We like onions, ham, turkey, bell peppers, and potatoes) 

-In a large skillet, crumble and brown the sausage over medium-high heat.
-In a large bowl, whisk the eggs, salt, pepper, and milk together.

-Once the sausage is fully cooked, add the egg mixture to the skillet. Scramble the eggs and sausage together until eggs are fully cooked and fluffy.

-Next is the fun part- stuffing the burritos! 
-I like to lay out foil for the burritos and I stuff 3 burritos at a time. Before stuffing them, I heat the tortillas in the microwave for 10-20 seconds to prevent them from tearing.

-Stuff the tortillas with egg and sausage mixture and any of your chosen "add-ins". Then roll the burritos up by pinching two sides in and then rolling as seen in the picture.

-Wrap in foil, place in a zip-lock, and throw in the freezer. (I found that wrapping the burritos in foil AND putting them in a zip-lock bag was the best method to prevent freezer burn and to keep them tasting yummy).

-To thaw and reheat burrito: Remove the burrito from foil and wrap loosely in a paper towel. Heat in the microwave for 1 minute, flip the burrito and heat 1 more minute.
